Coffee and walnut cake is exactly what it sounds like! It boasts a delicious coffee-flavoured sponge, a coffee or vanilla buttercream inside, with walnuts mixed throughout and placed on top.

How to make our coffee and walnut cake recipe
Equipment
- NESCAFÉ® Dolce Gusto® Pod Coffee Machine.
- 2x8 inch cake tins
- A whisk
- A couple of mixing bowls
- Greaseproof paper
- Wire rack
- Piping bag (optional)
Sponge ingredients
- 100ml (about half a pod) cooled NESCAFÉ® Dolce Gusto® Americano Intenso.
- 225g softened unsalted butter, with extra to grease the tins
- 225g caster sugar
- 225g self-raising flour
- ½ tsp baking powder
- 4 large eggs, beaten
- 1 tsp vanilla extract
- 85g walnut, some finely chopped and some roughly chopped
Buttercream icing
- 175g butter, softened
- 300g icing sugar
- Splash of vanilla extract
- Dash of NESCAFÉ® Dolce Gusto® Americano Intenso.
- 50g chopped walnuts
- 12 walnut halves
Coffee walnut cake recipe method
- Preheat your oven to 180°C. Grease your cake tins and line with baking paper
- Brew a NESCAFÉ® Dolce Gusto® Americano Intenso pod in your NESCAFÉ® Dolce Gusto® Pod Coffee Machine. Leave this to cool.
- Until fluffy and light in colour, cream together the butter and sugar
- Add the beaten eggs slowly, along with the flower gradually whilst beating in between
- Add your NESCAFÉ® Dolce Gusto® Americano Intenso coffee and walnuts. Mix gently with the whisk
- Divide the mixture evenly between your two lined tins. Bake for 20-25 minutes.
TIP: To check if they’re baked through, slide a knife into the centre – if it comes out clean, your cake is baked! - Remove from the oven, leaving them in their tins to cool for 5 minutes
- Transfer to your wire rack
- In the meantime, make your vanilla buttercream by beating the butter, icing sugar, and vanilla extract until pale and fluffy. Add a dash of NESCAFÉ® Dolce Gusto® Americano and the roughly chopped walnuts and mix
- Allow this to cool in the fridge for 20 minutes
- When the cakes are cold and the buttercream is chilled, add the buttercream to the flat side of each cake
- Either pipe (if you’re a superstar baker) or spread the remaining buttercream on top, decorating with the halved walnuts.
- Cut and serve to your loved ones!
